Let’s start with the obvious! Find fresh carrots and wash them well while ensuring that you scrub off all the dirt well. Since you will not be peeling off the layer, cleanliness is of utmost importance. And then, grate it roughly and keep aside.
Take a pan on medium heat and add a decent amount of ghee once the pan heats up a little. Now, drop the grated carrot in it and saute it well. At this point, add milk of your choice and continue stirring.
To add some more flavour, add ground cardamom and raisins. You can also add cashew nuts and almonds if you wish to. Once the raisins regain thickness, add sugar. For the health-conscious folks, you can add any sugar-free substitute, like jaggery.
When everything combines well, add Palkova add continue stirring. In a few moments, your special and simple Gajar Halwa will be ready. Drop-in a few pistachios and serve it hot. If you like it cold, you can also allow it to sit for some time in room temperature before popping it in the fridge.
