Mutton Sukka
Mutton Sukka has a lot of ingredients. However, the recipe is as easy as it can get! Take a look.
Ingredients:
- 500 gm mutton
- 2 sliced thick onion
- 1 sliced tomato
- 1 inches cinnamon
- 5 green cardamom
- 1 handful chopped curry leaves
- 1/2 tablespoon coriander powder
- 1 teaspoon garam masala powder
- 2 pinches salt
- 1 dash powdered spice black pepper
- 3 cups of water
- 1 sliced & slit green chilli
- 1/2 teaspoon urad dal
- 4 clove
- 1 star anise
- 2 teaspoon red chilli powder
- 1/2 teaspoon powdered cumin
- 1/2 teaspoon powdered turmeric
- 1 1/2 tablespoon sunflower oil
This is an extremely simple recipe and can be put together in no time. Take the pressure cooker and add in all the ingredients listed for making mutton sukka and ook for 15-20 minutes on medium flame. Remove the same from the stove and wait for the pressure to release naturally. Make sure that the meat is cooked. Just press a piece of meat and it should fall off the bone easily. There would be a little gravy left in the pan. Take a non-stick pan to roast the mutton. Remember to add a bit of oil from time to time to avoid the meat from getting stuck to the pan. Take a pan and add in the mutton mixture along with the gravy to the pan. Cook the same for the next 7 minutes. Once the mutton is dry, add some curry leaves and fry till the mutton is nicely roasted and brown. Your dish is ready!
Nati Koli Saaru
Better known as local chicken curry, this one is the ultimate comfort food for all non-vegetarians!
Ingredients:
- 300 grams of chicken
- 1 teaspoon red chilli powder
- 1/4 teaspoon turmeric powder
- Salt
- Sunflower oil
For the masala
- 2 onions, roughly chopped
- 2 tablespoons fresh grated coconut
- 4 cloves garlic
- 1-inch ginger, chopped
- 1-inch cinnamon
- 4 cloves
- 4 dry red chilli
- 1 tablespoon poppy seeds
Heat a small skillet on a medium-low flame and add the poppy seeds and dry roast them followed by cloves, cinnamon and dry red chilli. Keep aside. Heat another pan add a tablespoon of oil to fry some ginger, garlic and onions. Then add grated coconut and saute well till they turn light brown. Now, take a mixie and combine the contents in both pans to make a smooth paste. Add some water for better consistency. Now, heat oil in the pressure cooker and add the chicken, turmeric powder, salt and red chilli powder. Roast the chicken in the pan for about 5 minutes. Add the ground masala and mix until the chicken is cooked and turn off the heat. Allow the pressure to release naturally and your dish is ready!
