Coconut Chicken Curry
Heat oil in a pan, add sliced onions and fry the same until it is golden brown. Then, grind green chillies, garlic, and ginger together and then add the powdered red chilli, coriander, cumin, and turmeric. Fry them together for a minute or so. Now, add the ground chilli paste and tomatoes to the above and fry again. Add the chicken pieces and coconut milk along with a cup of water to improve the consistency. Bring the same to boil. Meanwhile, grind the soaked poppy seeds in 2-3 tbsp water into a smooth paste and add poppy seed paste to the curry and when it comes to boil. Let the gravy thicken a bit. Add the thick coconut milk and mix well. Once it is brought to a boil, add chopped coriander leaves and your dish is ready!
Lapsi Dessert
The first step to make Lapsi is to soak raisins in water. Meanwhile, take a pan, add water and the desired amount of almonds in it. Let the almonds boil for a minute or two. Then, remove the almonds and put them in ice-cold water. Keep aside. Heat the pan on medium flame and add some ghee in it. Once the ghee is heated, add broken wheat and stir it until it turns into a light brown mixture. Add water to the pan and let the wheat cook until it gets tender. Once the water evaporates, add sugar, cardamom powder, peeled and chopped almonds, raisins, ghee, and water. Cook the mixture for about 10 minutes. Your dish is ready!
