Vegetables are often seen as the villains on the dinner table. Greens especially aren’t a hit amongst many youngsters and kids. However, there is always a chance to find your way around it. Today, chef Sanjay Thumma of Vah Re Vah is here to help us all out. He has found a way to make spinach delicious and even make it look not-so-green with a white sauce. Start by finding and washing a bunch of fresh spinach. Chop it as finely as you possibly can and set it aside. Now, take a pan and add olive oil or any refined oil to it. Once the oil starts to heat up, add finely minced garlic with a pinch of salt.

As you saute it, add a cup of finely chopped onions. When the spluttering reduces, add spinach to it. Continue stirring it for a few minutes, until the spinach reduces in size. Now, add a spoonful of all-purpose flour and give it a good mix before taking off the heat.

Allow the spinach mix to cool down. At the same time, take another bowl and break open an egg into it. Add black pepper powder and beat it well before adding the spinach to it.

Now, take the pan that’s used to make small idlis and grease it well with oil. Pour the egg and spinach mixture into it and allow it to cook for a few minutes. On the other hand, start preparing for the white sauce.

Take a saucepan and add onion clipped with cloves. Add some butter along with all-purpose flour. Mix it well and then add warm milk with water, salt, black pepper powder, nutmeg powder. Cook it until the mixtures start coming together and thickens.

Add cheese at this point. Keep stirring until you achieve the desired consistency. Now, turn the flame low and remove onions from the sauce. Drop the spinach balls that were cooked earlier into the sauce. Allow it all to cook for a few seconds before you serve it hot.
