‘Tis the season of holidays, celebrations, sweet delicacies, and all the happiness. There are discount coupons available in bulk, and there’s an offer in every store. While shopping spree is mandatory, how will you deal with all the sugar cravings? It’s easier said than done. But every lock has a key, and every problem has a solution. Once again, coming to rescue us from the sin of gluttony, is the Konidela kodalu – Upasana Kamineni. The health-conscious star is here to save you loads of calories and guilt.
Recently, Upasana shared a cake recipe for the festive season. It is gluten-free and refined-sugar free. What more can you ask for? So, let’s get started. Here are all the ingredients that you need – almond flour, coconut flour, baking soda, salt, nutmeg, cinnamon, some eggs, orange juice, vanilla and butter.
Start by adding the almond flour and coconut flour into a large bowl. Next, add a pinch of baking soda and follow it with salt as per your tastes. Be sure to sprinkle in a little bit of nutmeg and cinnamon, for some flavour. Once done, take your blender/food processor and mix the wet ingredients. Start off by melting butter and set it aside. Break a few eggs into your chosen bowl, beat them. Add orange juice, and then, pour in the melted butter.
Now that the batter is ready, it’s time to add the sweetener to this cake. No sugar, no jaggery, no added preservatives. All you need is a handful of dry fruits. Dates, Apricots, Black raisins. You can rehydrate figs and raisins in warm water before adding it to the cake batter. Once you have whisked all the ingredients together, add walnuts and orange zest.
Preheat your oven to 185-degree Celsius, for an hour, before popping the cake into it. Let it stay in for some time and keep checking by poking a skewer. Finally, once the cake has baked, you can gorge on it directly. Or you can add another thin layer of glaze, made by mixing honey and rum. After all, ‘tis the season of holidays.
