1. Benne Murukku (known as ‘butter chakli’ in many parts of the country)
The ingredients to make this easy dish are: Rice Flour, Roasted Gram, Gram Flour, A Pinch Of Asafoetida, Jeera seeds, A Pinch Of Turmeric Powder, Salt, Lemon-Sized Butter, Oil
Preparation: Take 1/4 cup of roasted gram and make a fine paste in a mixer-grinder. If you need to sieve it do so, but ensure there are no lumps. In a wide container add 1 cup of rice flour along with 1/4 cup of roasted gram flour (that you just ground). Along with this add 1/4 cup of gram flour. Next, add salt (as per your taste), a big pinch of asafoetida, cumin seeds and a pinch of turmeric powder. If you want you can add some red chilli powder for more spice (optional). After adding the butter, mix well until it becomes a soft dough consistency. While heating oil in a pan, take the dough and fit it into a chakli maker. When the oil has just heated start squeezing the equipment to make lines. You can shape these in any manner as you wish. Serve hot or at room temperature!
2. Nipattu (a type of flat and crispy snack with gram flour as the main ingredient)
The ingredients you need are: Rice Flour, Fried Gram, Groundnut or Peanut, Chiroti Rava or Maida Flour, Grated Coconut, Red Chilli Powder, Salt, Carom Seeds, A Pinch Of Asafoetida, Sprigs Of Curry Leaves, Oil
Preparation:Â Lightly roast the rice flour along with chiroti rava (or maida) on a low heat and switch off the gas as soon as you feel the mixture is heated enough. With a small spoon of fried gram mix this rice flour-rava/maida mix. Take the rest of the 1/4 cup of fried gram flour and make a dry powder in a mixer grinder. Add this to make rice flour mixture followed by a ground powder of roasted raw peanuts. Add this into the bowl too. Now, mix in the fry ingredients;Â asafoetida, salt, carom seeds and red chilli powder to the bowl and give it all a good mix. The curry leaves and grated coconut come into the picture now. Once this is done, take 3 tablespoons of hot oil an add it to the mixture. Carefully mix to form a hard dough-like consistency. Roll out the dough a little thicker than a chapati. Take a round cutter (any object with sharp round edges in your kitchen) and make the circles before frying in hot oil. Serve crispy Nipattus to your loved ones!
3. Kodubale (a ring-shaped snack that is deep-fried with a spicy batter)
The ingredients needed are: Rice Flour, Fried Gram, Chiroti Rava or Maida Flour, Grated Coconut, Red Chilli Powder, Salt, Carom Seeds, A Pinch Of Asafoetida, Sprigs Of Curry Leaves, Oil
Preparation: Except for the peanuts the ingredients from the previous recipe and a Kodubale recipe are almost the same. However, there is a slight difference in the recipe. Let’s find out what.
Begin with lightly roasting the rice flour along with chiroti rava (or maida) on a low heat and switch off the gas as soon as you feel the mixture is heated enough. Next, make a dry powder of fried gram in a mixer grinder. To the grinder, then add curry leaves, coconut (dry or fresh), asafoetida, salt and red chilli powder to make a fine paste. Add this mixture to the lightly roasted rice flour mixture. To this, add the carom seeds and give it a good mix. Now, take 3 tablespoons of hot oil an add it to the mixture. Carefully mix to form a dough-like consistency, soft enough to make rings. With your hand slowly roll out pieces of this mixture and make it into a ring-shape before deep-frying till brown colour in oil. Serve hot or at room temperature!
4. Gasagase Payasa (a poppy-seeds sweet porridge)
The ingredients needed to prepare this sweet dish are: Gasagase, Rice, Jaggery, Grated Coconut, Milk, Water, Cardamom
Preparation: Dry roast 3 tablespoons of Gasagase along with 2 teaspoons of rice in a pan on medium flame. Once the rice turns completely white, set the Gasagase and rice to cool on the side. Using a mixer grinder then add the poppy seeds and rice mixture along with 1/2 cup grated coconut and one cardamom. Remember, it has to be a smooth but runny paste so add water if necessary. Then, transfer it to a heating vessel and add 2 cups of milk, 1/2 cup of jaggery and a little more water. Keep mixing occasionally until the mixture comes to a boil and serve. The best part is, you have this dish hot or cold it will be equally delicious.
