In the Zee Telugu show Muddha Mandaram, Soundarya is doing all that she possibly can to help her family. Recently, she tried making the popular Andhra dish, Gummadikaya Vadiyalu. She says it is full of medicinal values and good for Shiva Shankar’s health. Although an off-beat combination, this can be an appetiser, side dish and a simple snack. It is easy to make and delicious to eat. So, without further ado, let’s explore how to make this wholesome and lip-smacking dish.

Here’s what you will need to make your Gummadikaya Vadiyalu: Gummadikaya or Ash Gourd, Minappapu or Udad dal, fresh green chillies, water, turmeric and salt to taste.

Begin with soaking the Minappappu in water for about 4 hours. As they do their job, you can move to the Gummadikaya. Wash, clean and start cutting it into cubes of almost an inch. Add some salt to the cubes and allow it to stay for 30 minutes. In the meantime, Take the fresh green chillies and grind it into a thick paste. Once done, set it aside. Go back to the Gummadikaya cubes and also keep an extra container handy.

Now, grab a handful of the cubes and squeeze them into hands, in order to remove all the excess water from it. And then transfer the squeezed/mashed Gummadikaya cubes to the new container. Repeat it for all the cubes. Set this new bowl aside and go back to the Minappappu. Drain out the water and grind it to form a thick paste-like consistency – as you would do have a wada batter. Once you have your batter, take a larger bowl to contain everything.

Start by adding the cubes into a new bowl, add the batter to it, and the green chilly paste. Before you give it all a good mix, add some turmeric powder. Mix it well. Here comes the part that requires your patience. Grab a washed cotton cloth or a saree. Fold it 2-3 times to thicken it. Spread it on the floor, in an area that continuously has sun-light, and scoop out the batter on to it. This could take anywhere between 3-5 days until they are completely dry. Don’t forget to flip them over every day.
