To make this chicken 65 fried rice, you need to start by finding and cleaning the chicken. Make sure to get your hands on boneless chicken. Place it in a large bowl and marinate it .
Add coriander powder, cumin powder, chilli powder, chilly sauce, crushed pepper, ginger garlic paste. Give it a good mix. You can add a few drops of red food colour if you wish to.
Now, add some all-purpose flour and cornstarch which will make it easier to fry later. Finally, add oil, water, and a pinch of salt. You can also add some finely chopped curry leaves. Cut them into smaller pieces and allow it to rest for 2 hours. This will ensure that it comes out tender and tastier.
In the meantime, prepare your rice and cook it well. When the chicken is done marinating, proceed further. To prepare your own wok pan, take any deep pan and add a generous amount of oil to it.
Once the oil starts heating it, pick the pan up and swirl it around for the oil to coat the surface evenly. Break open an egg and continue picking it up. Tilt the pan sideways and add some onion in the same corner as the egg.
While the two ingredients saute together, add finely chopped garlic and ginger on the other side. Place it back on the heat and scramble all the ingredients together. Now, add your chicken 65 pieces and keep stirring it.
Once you are happy with it, add a pinch of salt, soya sauce, chilli sauce, crushed pepper. You can also add green chillies if you enjoy spicy food. Add the cooked rice and saute everything until the colour incorporates evenly. You can add flavouring salt at this stage, although, it is optional.
