The Bengali new year is soon approaching us all and devouring some delectable dishes with all our loved ones sitting around the table sounds like the perfect Noboborsho plan. Occasions come and go, but indulging in the good old Bengali food-favourites remains a constant for all the celebrations. Find your choice of diverse and mouth-watering recipes below, that you would love to include in your Shubho Noboborsho menu this year!

1. Dum Chicken Masala

Marinate the pre-boiled chicken in a mixture of curd, garlic paste, ginger paste, mustard oil and salt. Pour some mustard oil in a pan and add bay leaves, dried chillies, jeere-phoron, and chopped onions. Add garlic paste, ginger paste, chopped chillies, tomato paste, salt to the mustard oil. Then add the boiled chicken, chicken masala powder, and small potatoes and stir. Watch the video to know more:

2. Mishti Doi diye Mutton Kosha

Fry dried chillies in ghee and mustard oil and keep them aside. Then add sliced onions, salt, sugar, turmeric powder, garlic paste, ginger paste, fried onions, green chilli paste, gota garam masala, chopped tomatoes, onion paste, bay leaves, mishti doi, Kashmiri chilli powder, dried chilli powder and stir. Add garlic, boiled mutton pieces, shahi garam masala powder and ghee and stir. Cover the pan and cook till done.

3. Tyangra Maach’er Jhaal

To prepare Tyangra Maach’er Jhaal, add kaalo-jeere, steamed radish pieces, fried eggplant pieces, jeera powder, ripe chillies, salt, tomato slices, and turmeric powder to mustard oil in a pan. Add water and stir well. Then add fried Tyangra Maach pieces to it and cover it till cooked. Garnish with bori-bhaja and coriander leaves and serve.

4. Palong Moong diye Machher Mathar Ghonto

Add chopped onions, garlic paste, fried maacher muro, steamed spinach leaves, raw chillies, red chilli powder, turmeric powder, salt and tomato pieces to heated mustard oil in a pan. Stir well and add sugar, moong dal, bori bhaja, and coriander leaves. Thoroughly stir it again till cooked to serve!

5. Basanti Beguni

Marinate the eggplant slices with turmeric powder, lemon juice, ground pepper, crushed coriander leaves, salt, and sugar. Mix besan, roasted cumin seeds, chopped coriander, baking soda, salt and sugar, whipped plain curd, red chilli powder, cumin powder, turmeric powder, water, and blend to make a batter. Dip the marinated eggplant slices into the batter and deep fry in heated oil. Serve them hot and fresh along with your main course items.

6. Mochar Dhokar Dalna

Mix boiled mocha paste, chhola’r dal paste, flour, hing powder, salt, sugar and heat in mustard oil. Cut dhoka into pieces and deep-fry. Add dried chillies, bay leaves, cinnamon, cardamom, ginger paste, jeera paste, turmeric powder, salt, sugar and water. Add potato pieces, tomato paste, chilli powder, water, fried dhoka pieces, Dalna masala powder, chillies, garam masala powder and ghee. Stir well till cooked and serve!
