Chef Pallavi Nigam promises to give a recipe that ensures complete success. She also makes the easiest and the oldest Roman pizza and called it Gustoza Pizza. To make this, you need to get started with only a few basic ingredients.
Start by pouring some yeast in a small cup of water to rehydrate the enzyme. Make sure the water isn’t too hot or cold, but perfectly lukewarm. In a large bowl, take some flour and add a pinch of salt into it. Give the salt and flour mixture a rough whisk and start pouring the rehydrated yeast and water into it. This should allow you to form a soft dough.
Once your dough has been formed, drop it into a bowl and set it aside for a few hours. You will be surprised to see the air it captures. Beat it to take out the excess air and divide the dough into equal pieces. Now, roll the pieces roughly to make circles and allow them to plump again, for about 15 minutes. As it rests, take a pan and pour olive oil into it.
To the pan, add garlic and saute it for a few minutes. Add cream or fresh cream, some cheddar cheese, and parmesan cheese to your liking and give it a good stir. When everything is well combined, turn the flame off. Boil potatoes or sweet potatoes in a separate bowl at the same time, along with the veggies of your choice. This will be your not-so-obvious but traditional pizza sauce. Revisiting the dough, take some flour and dust it on a clean surface.
Take one piece of the dough at a time and flatten it using a rolling pin. When you are satisfied with the thickness and the shape, transfer it to a baking tray which you must dust with some flour, too. Pour some olive oil, the pizza sauce and a layer of potatoes as per your preference. You can also add all the veggies, herbs and extra cheese at this stage.
Chef added some steamed broccoli, bell papers, basil leaves, rosemary, lots of parmesan cheese and a dash of olive oil on top of it before popping it in the over. Allow it to bake for 20 minutes and then you’ll be ready to enjoy a wholesome and sumptuous pizza right at home.
